Spice it up: Make the viral Chilli Margarita

Ready for the cocktail of the season? This Chilli Margarita from master mixologist Sam Lawson-King at Roots & Seeds Kitchen Garden will knock your Christmas socks off. Make this delicious spicy number for your guests and add a dash of happy hour to your yuletide.

Firstly, make the the spicy syrup using this quick cheat method:

Bring one litre of good quality apple and rhubarb juice to the boil.

Add 1kg of sugar and turn down the heat Gather some pre-chopped chillis (from a jar works fine) and a sprinkling of thyme, and add these to the mixture. Let this infuse for 15 minutes, then strain. Put aside.

Now to build the cocktail:

You’ll need:

30ml Blanco Tequila 
30ml Reposado Tequilla (or use 60ml of whichever Tequila you have lurking in the cupboard)
30ml Spicy Syrup (as above) 
60ml Lime Juice 
15ml Orange Liquor 

Add all the ingredients to your shaker and shake it well.

Dip the rim of the glass into flaked salt and chilli flakes and pour cocktail. 

Boom!
